1. Pumpkin Barfi
Ingredients used :
Besan/Chickpeas flour – 1 cup
Grated pumpkin – 1/2 cup
Shredded Coconut – 1/2 cup
Melted Ghee/Clarified Butter – 1 + 1/2 cup
Sugar – 2 + 1/2 cups
Milk – 1 cup
Green Cardamom Powder – 1 tsp
Muskmelon seeds – 2 tbsp
How To Make?
– Grease a square plate with ghee and keep it aside.
– Sift besan flour. Add the flour in a pan on low flame for 2 minute and lightly roast it. Keep stirring.
– Saute grated pumpkin and coconut for a few minutes in a pan so that the raw smell leaves from it.
– Now combine besan flour, sauteed pumpkin-coconut, milk, melted ghee, sugar in a heavy bottom pan and mix it well to ensure there are no lumps.
– Place the pan on the gas stove on low flame and stir continuously for a few minutes.
– Now you’ll start seeing it bubbling and ghee leaving on sides. Add cardamom powder and when it gets thicker transfer the content into the ghee greased plate and leave it for a few minutes.
– When it is still warm, sprinkle musk melon seeds on top and cut it into square pieces.
– When it cools down, keep it in an airtight container.

2. The Very Famous Boondi Ke Ladoo
Ingredients used :
500gm gram flour
1 litre water or milk
750gm ghee
10-12 drops orange color
10-12 saffron flakes, soaked
50gm cashew nut chopped
50 gms raisins
10 cardamoms peeled
How To Make?
– Prepare a thin batter with gram flour and water or milk and heat ghee in a pan.
– Fill the fryer or strainer with the batter up to half.
– Position it over the pan and drain boondis in hot ghee by hitting the strainer on the side of the pan, lifting up then again hitting. This process should be finished very quickly.
– Fry them to golden color, drain and remove. Use up all the batter.
– Prepare sugar syrup of one and a half thread consistency by boiling sugar and water.
– Add saffron water and color to the syrup. Mix the boondis, syrup, dry fruits and cardamom.
– After 10 minutes, sprinkle over a little hot water, cover and keep for 1 1/2 hour.
– Prepare round balls with moist hands.

3. Coconut Ladoo
Ingredients used:
½ cup khoya
1 tsp ghee
10-12 nos cashews and almonds
1 ½ cup desiccated coconut
1 cup condensed milk
How To Make?
– Take khoya in a pan and saute it well to melt it and form a paste.
– Now take some ghee in the pan and roast cashews till golden brown.
– Followed by cashews, take almonds and roast till golden brown.
– Take dessicated coconut in a pan and saute it till light brown and add condensed milk.
– Mix them well to form a thick paste and add khoya paste and mix well.
– Make small round balls of the paste and put roasted cashews and almonds inside the coconut ball.
– Roll the coconut balls in the roasted dessicated coconut.
4. Kaju Katli Or Kaju Barfi
Ingredients used:
1 tsp saffron
100 gm cashew nuts, broken
6 Tbsp sugar
1/2 tsp green cardamom powder
2 sheets silver var
How To Make?
– Grind cashew nuts into a fine powder.
– Heat sufficient water in a non-stick pan.
– Add sugar and saffron, mix and cook till syrup thickens.
– Add cardamom powder and mix well.
– Add cashew nut powder and mix well, cook for about 3 minutes.
– Spread the mixture onto a thali and let it cool to room temperature.
– Transfer mixture onto a worktop and knead a little.
– Spread the mixture into a burfi tray, garnish with silver varq and let it set.
– Cut into squares and serve.
5. Rice Kheer Recipe
Ingredients used:
5 Cups milk, full cream
1/4 cup rice (washed)
1/2 cup sugar
10-12 Raisins
4 Green cardamoms
10-12 almonds (shredded)
How To Make?
– Boil the rice and milk in a deep pan.
– Simmer over low flame, stirring occasionally till the rice is cooked and the milk becomes thick.
– When done add sugar, raisins and cardamoms.
– Stir till sugar gets dissolved properly.
– Transfer into a serving dish and garnish with almonds.
– Serve hot or chilled.
